Best Oatmeal Coconut Chocolate Christmas Cookies Made for the Christmas Cookie Swap

Making cookies, especially Christmas Cookies is a big deal. Here in my family as the holidays roll closer, the anticipation grows. I am a blogger and I blog about all kinds of things but, I really love talking about food.
My wife who is an experimenter when it comes to her creations has come up with some amazing cookies. For lack of a better description I have called them The Best Oatmeal Coconut Chocolate Christmas Cookies.
The cookies were so good that I had her make a video (see below) about how she made them. She was not crazy about doing the video but we felt it necessary. She will take a recipe and tweak it to make it her own and every time she does it is better than the original.

So here is the recipe for the OCC Christmas Cookies:
1 1/2 c butter, softened
1 1/4 c sugar
1 1/4 c brown sugar
1 Tbsp vanilla
2 eggs
4 c flour
2 tsp baking soda
1/2 tsp salt
24 oz choc chips (or whatever you like in your cookies. It can be alternated to suit you.)( I chose to divide it up between choc candies, oatmeal and coconut )
Heat oven to 350 F. In a large bowl, beat butter, sugars, vanilla and eggs until light and fluffy. Stir in flour, baking soda and salt ( dough will be stiff ) . Stir in choc chips or extras of your choosing.
Drop dough by tablespoonfuls. Bake 11 to 13 minutes or until light brown ( centers will be soft ). Cool 1 to 2 minutes. Roughly 6 dozen cookies. Enjoy!
