VEGETARIAN LENTIL SOUP with VEGETABLES.
Here is a quick little receipe of my own for vegetarians.
As a vegetarian it can be a challenge to know what one should eat. The main concern of course, is that your protein requirements are met and usually , there not.!
I havent written this blog as an argument to persuade one on the merits of being a vege.What I aim is to try and help and educate on great vegetarian choices.
I have experiened many times , the unhealthy vegetarian, always sick and rundown, maybe a little anaemic, fallling hair, low energy levels low mood , pale generallly not particularly healthy looking.
Its vital that as a vegetarian you dont give up eating meat and then WHAT? Hve nothing to replace it with.
Thats where you must re-educate yourself on what a vegetarian can eat. And, there is more than plenty of choices. Except , do not turn into a mouse overnight and eat a diet of cheese, cheese and more cheese! This is not good enough for your protein levels.
Diary products , unfortynatly consist of more than 70% of our diet and yes I hear you ask ” Isnt it supposed to be the best calcium scource for our bones”.
As it turns out in countries that consume the highest amounts of Diary products in the world also have the highest Osteoporosis problems. Osteoporosis is where the bones do not have their full calcium requirements and over time the bones weaken , become brittle and break or fracture easily.
So What Protein Do I recommend to keep those lovely bones healthy and those beautiful smiles glowing.
- lots of Lentils ,beans, pulses as part of your regular daily meals. eg; Chickpeas, Pinto beans, Black-eyed beans,Butter beans,Aduki beans, and all of your Puy Lentils, green,brown,red and yellow lentils. etc. the only bean that dosent qualify, so only in moderation is Heinz beans.
- Quinoa grain, pronounced ‘Keenwa ‘, this is one of the many powerful superfood grains that the Aztecs ate. It is a grain that has a 16% protein content , which is very high for a food that is classed as a carbohydrate. Eat this daily. You will find it in your local Healthfood store or Organic store and in many differnt forms from flakes to cereal to grain to milk.!

So Finally, here it is a quick ,very wholesome Lentil Vegetarian Soup.
INGREDIENTS
- lentils of your choice, I find Brown and Green Lentils the best .Some green and yellow split are a nice addition.
- Quinoa Flakes
- Bouillion Vegetable stock
- Red Camargue rice or any rice will do if you cant get this one.
- one Leek, 2 kombu sheets, 2 carrotts, Garlic to your taste,small piece of ginger.
- mixed herbs ,coriander for garnish and a spice /spices of your choice.
- Boil /steam the rice for 15 min.
- Add in the lentils, making sure that you have washed them thoroughlly.
- By this time you will need to add more water. So mix 1 tblsp bouillion stock with a pint and a half of boiled water.
- Also add in the Kombu sheets.
- Let this simmer away for another 10 mins, keep an eye on it and you may need to stir every once in a while.
- Now , while this is simmering you can be slicing and diceing your choice of vegetables.
- If your like me , I prefer my vegetables lightly boiled so a tthis piont yaou could chechk if is is ‘Al Dente’ enough.
- When ready throw in your vege’s, garlic ,ginger,herbs and 3-4 tblsp of Quinoa Flakes. The quinoa will act as a thickner so it also avoids you having to use flour or potatoe.
- Let this simmer away for another 10 minutes , stirring when needed.
- At this stage it should be done and you could let it simmer on a low heat until you are ready to serve.
- You can then garnish this with some coriander.
