Is there an ideal time to post on Social Media?

I found this great infographic that summarizes the main points we have to be aware of when we put something online. It turns out that there are better days and better times of the day to post things so that they will be seen, and they are different in the different media.
For example people use Facebook and Twitter more during the week and Pinterest and Tumblr on the weekend.
Adding an image can also affect your chances of being seen.
But why am I writing so much. This infographic summarizes it all in one picture. They say that a picture is worth more than a thousand words, so I will let this one talk for itself, but first I have a few questions and comments.
Scheduling
So do you have to time your posts at the right time? Some platforms allow you to schedule posts. On Facebook, when you are posting on a fan page, you can schedule the post. This blogging platform also has this option.
Time Zone Optimization
But what if your target audience is in several time zones? I have people I am reaching out to in all the English speaking countries.
In the United States alone there are 4 time zones. Add to that Australia England which are in completely different parts of the world.
The only place I have seen a solution to this is with my autoresponder, Get Response that enables you to send emails according to the time zone of the recipient.
So which time zone do you aim for or do you change it occasionally? I would be happy to hear from people what you do.
