Well it’s officially Spring and it looks like we’ve got a big winter storm heading our way this weekend… what better snack to have on hand than chex mix? Right?
When I was a kid my mom rarely made chex mix… but I LOVE it! Now I can make easy microwave chex mix in less than 10 minutes. Added bonus, this is a recipe the kiddo can do almost all on her own!
Chex Mix Recipe
What you need:
1/4 C butter
4tsp worcestershire sauce
1 tsp salt
1 tsp garlic powder
1/2 tsp onion powder
7 cups chex cereal (variety of flavors)
1 cup of pretzels
1 cup peanuts
1 cup oyster crackers
(I’ll be honest here… I don’t like any of the extras in the mix, I just add a couple extra cups of chex and call it good)
What you do:
Melt the butter in a large bowl in the microwave.
Combine the spices in a small bowl and stir well. (if you have a little one doing the measuring and stirring, you may want to get this done before you melt the butter that way it doesn’t solidify again while you’re little one is working)
When the butter comes out melted, stir in the spice mixture and combine.
Stir in the chex (and any other mix ins you’re using)
Pop in the microwave for 2 minutes.
Pull out and stir well.
Two more minutes in the microwave.
Pull out and stir.
Mine was almost done at this point… it can take up to 6 minutes, depending on your microwave, but watch it because it goes from golden brown to burnt really fast.
Take mix out of the microwave and pour out onto a paper towel covered cookie sheet to cool. (this only takes a few minutes, if you can keep your fingers out of it).
Eat and enjoy!
You will be pleasantly surprised that this chex mix is crispy, and crunchy and does not get soggy even though it’s cooked in the microwave! I was thrilled the first time we made it.
There are now tons and tons of different chex mix recipes…but the original chex mix recipe is still my favorite, though I love it even more now because it’s so quick and easy in the microwave!
