How to Make Zucchini Stir Fry from Scratch

Zucchini Stir Fry is NOT always the same! You can make it from scratch and I am here to show you how to make it!
All right so it is getting to be near dinner time and you have been crazy busy all day and have NO clue what to make. You think stir fry would be good, but the kids normally to not like stir fry. So you have to think of how to make your zucchini stir fry from scratch, but keep your kids in mind while doing it.
Look in your fridge and see what you have on hand, your tiered and you really don’t want to run to the store, you just got home from work or taking the kids here and there and everywhere! Okay, so you have zucchini or squash (both will work) you have tomato, onion, bell pepper……(okay, so this is what I had on hand, your “on Hand” items for zucchini stir fry could be completely different THAT’S OKAY).
I took a look in the freezer and checked to see what kind of meat I had on hand. ground fresh Italian sausage, chicken, and some lean hamburger. All my family likes the spicy tang of the sausage, so I will use that.
How to make my version of Zucchini Stir Fry from scratch
- 2 or 3 tablespoons of olive oil
- 1/2 lb Fresh ground Italian Sausage
- 1/2 large onion
- 1/2 a medium size zucchini or yellow squash
- 1/4 of a large bell pepper
- 2 garlic cloves
- 1 small bag steam-able microwave broccoli/cauliflower
- Mozzarella cheese shredded or block and you can shred it
- 1 Medium tomato
- cayenne pepper
- Italian seasoning
- onion powder
- garlic powder
- a dash of salt
So here are the steps to creating this really yummy zucchini stir fry. First put some olive oil in a skillet. Don’t turn it on until you have chopped up your vegys.
- Chop up your onion, green pepper, I also used 2 garlic cloves as well. Now turn on your pan to a medium-low heat. Cook until the onion is clear.
- Add your sausage. I just clumped mine into the pan so I would have large pieces of meat, my hubby hates it when I chop it up into tiny bits of meat.
- I brown this for a bit, while doing so I chopped up my zucchini, again you can use yellow squash as well. I put it in the pan with the meat.
- I wanted something “more” so I looked in the freezer and decided to cook the broccoli/cauliflower combo I had. It was a self steam microwave kind so I cooked that for about 4 min. I still wanted it a little crisp.
- Then I added that to the meat mix.
- I then sprinkled some cayenne pepper on the zucchini stir fry for a little more spice, please note….A LITTLE GO A LONG WAY….to much and your meal is way to hot, so be careful.
- I also added a little Italian seasoning, onion powder, garlic powder and a dash of salt.
- Once it was all cooked up I put it in a serving dish and shredded some mozzarella cheese on top of it for a little added bonus. My kids love broccoli with cheese on it. So I figured I would give them more reason to try it. They all loved it! Oh yeah, I also topped it with chopped up tomatoes as well. (After the cheese melted)
So If you are in a bind and aren’t sure what to make, you probably have all you need in your kitchen to make some type of stir fry, but it is especially good if you can make it zucchini stir fry! So darn tasty and healthy for you and your family!
