Eclair Cake Recipe
Of course a no-bake treat would make it to the top of our list. Our goal is ultimate satisfaction with little work. If you have a hankering for something sweet and full of texture, the eclair cake recipe will be your new go-to. From allrecipes.com:
Ingredients:
2 (3.5 oz) packages instant vanilla pudding
1 (8 oz) container frozen whipped topping, thawed
3 cups milk
1 (16 oz) package graham cracker squares
1 (16 oz) package prepared chocolate frosting
Directions:
Blend pudding mix, whipped topping, and milk.
In a 13×9 inch baking pan, arrange graham crackers in a single layer. Spread half of the mixture over the crackers. Add another layer of crackers and the remaining pudding mixture. Top with a layer of graham crackers.
Spread chocolate frosting over the top. Cover and chill in refrigerator for at least four hours.
Fudgy Ice Cream Cake
Martha Stewart brings us a beautiful looking yet, surprisingly easy to make ice cream cake recipe. Ice cream lovers of all ages will dig in enthusiastically. Don’t be scared away if you have never made ice cream cake before. Do keep in mind that the ice cream is easier to work with if it is just soft enough without being near melted. For best results, work in pints and let each pint rest from the freezer for about 15 minutes.
Ingredients:
Cooking spray
1/4 cup light corn syrup
1 3/4 cups heavy cream, divided
1/2 stick unsalted butter
2/3 cup granulated sugar
1/2 cup unsweetened cocoa powder, plus more for serving
Salt
3 pints vanilla ice cream
18 graham crackers
1 tablespoon confectioners’ sugar
Unsweetened cocoa powder
Recipe Directions:
Coat 8-inch square cooking pan with cooking spray, line with plastic wrap, and freeze at least ten minutes.
Combine corn syrup, ¼ cup cream, butter, sugar, cocoa, and a pinch of salt in a medicum pot and bring to a boil. Only heat the burner to medium-high and be sure to whisk while heating. Remove and let cool.
Press first pint of softened ice cream into pan and top with a layer of graham crackers. Drizzle ¼ cup fudge sauce over layer and return to freezer for fifteen minutes. Repeat twice.
Wrap in plastic and freeze about 8 hours (up to 3 days). Cover remaining fudge sauce and store in refrigerator.
When serving, invert pan under tepid running water. Invert cake onto a platter. Microwave fudge sauce for about 30 seconds until pourable. Pour fudge sauce over cake and freeze about five minutes.
Add whipped cream and cocoa.
Strawberry Cheesecake Recipe
If you are looking for something a little less traditional, consider the vibrantly colored strawberry cheesecake cake from Recipe Girl. This is a double bonus dessert, offering up two layers of cake sandwiching a layer of traditional cheesecake. The rich texture of cheesecake is balanced by the fluffy cake layers. We recommend making it easy for yourself and using box cake mix so, you will be able to enjoy the cake sooner.
Ingredients:
2 round layers of strawberry cake, made following directions on box
Strawberry Frosting
Fresh Strawberries
For the cheesecake:
2 (8 oz) packages cream cheese, softened
⅔ cup sugar
pinch of salt
2 large eggs
⅓ cup sour cream
⅓ cup heavy whipping cream
1 tsp vanilla extract
Directions:
Preheat oven to 325 degrees. Place a large roasting pan on lower rack of oven. Boil water on the stove top. Prepare a 9-inch springform pan and wrap bottom and sides in heavy duty foil.
Using an electric mixer, blend cream cheese until smooth. Mix in sugar and salt, blend for 2 minutes. Add eggs one at a time, blending after each. Mix in sour cream, whipping cream and vanilla until smooth.
Pour batter into prepared pan. Place pan in roasting pan in oven. Pour boiled water into roasting pan to a depth of about an inch of water.
Bake for 45 minutes. Remove and cool on wire rack for one hour. Freeze completely (4/5 hours to overnight).
To assemble the cake, simply place cheesecake between the two layers of strawberry cake. There is no need to frost the middle. Then, frost the top and sides, garnish with strawberries, and serve to your guests’ delight.
Petite Pastel Hearts Recipe
Since tiny cakes and cupcakes are all the rage these days, we could not leave this recipe for petite pastel hearts from Wilton off our list. These are sweet, delicate, and adorable. And they are surprisingly easy to prepare.
Ingredients:
1 package white cake mix, prepared
4 cans decorator icing
Your choice of pastel colored icing color
Coordinating sugar pearls
Directions:
Preheat oven to 350 degrees. Prepare silicone petite heart mold.
Fill mold with prepared cake mix.
Bake 8 – 12 minutes.
Cool in mold 15 minutes.
Remove and cool completely.
Heat icing cans 20 – 30 seconds in microwave (remember to remove lid and foil). Repeat until pourable. Stir in icing colors.
Pour icing on center of each cake so icing drips down and covers sides. Just before icing sets completely, place pearls.
Gluten-Free Yellow Cake Recipe
To ensure that all your guests will be able to enjoy your delightful dessert, you should have at least one great, gluten-free recipe at the ready. This yellow cake recipe will satisfy all cake lovers and you can be sure that it is safe for everyone.
Ingredients:
1 ½ cups white rice flour
¾ cup tapioca flour
1 tsp salt
1 tsp baking soda
3 tsp baking powder
1 tsp xanthan gum
4 eggs
1 ¼ cups sugar
⅔ cup mayonnaise
1 cup milk
2 tsp gluten-free vanilla extract
Directions:
Preheat oven to 350 degrees. Grease and rice-flour 2 round cake pans.
Mix white rice flour, tapioca flour, salt, baking soda, baking powder, and xanthan gum together.
In a separate bowl, mix eggs, sugar, and mayonnaise until fluffy. Add flour mixture, milk and vanilla. Mix well.
Spread batter into prepared pans.
Bake for 25 minutes. Let cool completely. Decorate as desired.
