When people think of soup, hot soup is what mainly comes to mind. Having a hot bowl of soup on a cold blistery day is comforting. Why not have a <strong>cold soup<\/strong> on a sweltering hot day.<\/p>\n<p>\u00a0<\/p>\n<p>There are just as many varieties of <em>cold soup<\/em> as there are hot soups. You can create a cold soup in a matter of minutes, using fresh fruits and vegetables adding a few other ingredients. <span style=\"text-decoration: underline\">Cold soup<\/span> can be used to start a meal or combine it with a salad for a refreshing lunch.\u00a0 The added bonus of cold soup is that it can be healthy depending upon the ingredients you choose to use.<\/p>\n<p>\u00a0<\/p>\n<h3>Cold Soup Ideas<\/h3>\n<p><a href=\"\/terryarkin\/cold-soup-recipes\/honeydew\/\" rel=\"attachment wp-att-252\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-252\" alt=\"honeydew\" src=\"\/terryarkin\/files\/2013\/03\/honeydew.jpg\" width=\"400\" height=\"300\"\/><\/a><\/p>\n<p>\u00a0<\/p>\n<p>Even though I will be sharing with you two recipes for cold soups today I am going to give you other ideas that you can consider turning into a cold soup. Fresh berries and melons are a great choice. You can make a\u00a0 cold tomato soup with fresh herbs and serve with a grilled cheese. Melon soups make a great starter on warm days. Cold soups are a wonderful option to serve between hot and spicy courses.<\/p>\n<p>\u00a0<\/p>\n<p><a href=\"\/terryarkin\/cold-soup-recipes\/img_9860-jpg\/\" rel=\"attachment wp-att-254\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-254\" alt=\"IMG_9860.JPG\" src=\"\/terryarkin\/files\/2013\/03\/boiling-tomatoe.jpg\" width=\"400\" height=\"300\"\/><\/a><\/p>\n<p>\u00a0<\/p>\n<h3>Cold Soup Recipes<\/h3>\n<p>Chilly Orange and Tomato Soup<\/p>\n<p>4 large seedless oranges<\/p>\n<p>6 ripe tomatoes<\/p>\n<p>3 stalks celery, strings removed<\/p>\n<p>3 cup carrots, shredded<\/p>\n<p>2 cups tomato juice<\/p>\n<p>1 teaspoon fresh basil, chopped<\/p>\n<p>4 tablespoon plain Greek yogurt (for garnish)<\/p>\n<p>Orange Zest (for garnish)<\/p>\n<p>Directions:<\/p>\n<p>1. Over a bowl peel oranges and cut between the membranes and place in bowl.<\/p>\n<p>2. Bring a small pan of water to a boil. Cut an \u201cX\u201d in the bottom of the tomatoes and place in boiling water for 10-15 seconds. Peel skin off and cut into quarters removing seeds. Save the tomato juices.<\/p>\n<p>3. Place tomatoes, oranges, carrots and celery into a blender.\u00a0 Add the juices from the oranges and tomatoes. Puree until smooth.<\/p>\n<p>4. Pour into a bowl add fresh basil and tomato juice, stir until blended. Cover and chill.<\/p>\n<p>5. Taste soup and salt if needed. Ladle into chilled bowl. Garnish with a dollop of yogurt and sprinkle orange zest on top.<\/p>\n<p>\u00a0<\/p>\n<p><a href=\"\/terryarkin\/cold-soup-recipes\/blender\/\" rel=\"attachment wp-att-255\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-255\" alt=\"blender\" src=\"\/terryarkin\/files\/2013\/03\/blender.jpg\" width=\"370\" height=\"493\"\/><\/a><\/p>\n<p>\u00a0<\/p>\n<p>Cucumber and Honey Dew Melon Soup<\/p>\n<p>3 cucumbers, seeded and cut into chunks<\/p>\n<p>3 1\/2 cups honey dew melon, seeded and cut into chunks<\/p>\n<p>1 1\/2 cups plain Greek yogurt<\/p>\n<p>2 tablespoons fresh mint, chopped<\/p>\n<p>Mint Sprigs, garnish<\/p>\n<p>Creme Fraiche (recipe below),\u00a0 garnish<\/p>\n<p>Directions:<\/p>\n<p>1. Make creme fraiche the day before.<\/p>\n<p>1. Place cucumber and melon into a food processor or blender, puree until smooth. Add yogurt and mint, blend.<\/p>\n<p>2. Pour into bowl, cover and chill. Remove from refrigerator, taste, add salt if needed.<\/p>\n<p>3. Ladle into chilled bowl. Place a dollop of creme fraiche and a spring of mint. Serve.<\/p>\n<p>Creme Fraiche<\/p>\n<p>1 pint heavy cream<\/p>\n<p>2 tablespoons buttermilk<\/p>\n<p>Mix together and allow to set at room temperature until thickened. Refrigerate.
