However, Dr James Braly’s experiments in the University of Maryland in the USA show one in a hundred with the condition and one in ten could be sensitive to gluten.

Gluten Intolerance Symptoms: Modern Wheat

Modern wheat is the chief culprit which has a protein called gluten which contains gliadin. Gliadin is a known intestinal irritant. In severe cases gluten damages the villi which are hair-like projections lining the small intestine.

Normally nutrients pass through the villi and if damaged they cannot. Modern wheat is different to traditional wheat of our ancestors. We now demand a ‘lighter’ loaf for one thing, and the higher the gluten content of bread the harder it is on our intestines. We also demand more interesting foods and so the food industry produces these products.

The condition occur in children and adults and tends to run in families. The first gluten intolerance symptoms in children are usually repeated stomach upsets and failure to thrive. Other symptoms normally include bloating, diarrhoea, anaemia and weight loss. It may arise in the first few months of weaning with foods such as cereals or rusks containing gluten.

Gluten Intolerance Symptoms: Digestive Problems

Digestive problems are common among gluten intolerance symptoms but some may show none of these. Other common gluten intolerance symptoms could include:

Sinusitis and ‘glue ear’.

Migraine

Malabsorption problems causing fatigue, anaemia, osteoporosis and weight loss.

Depression, behavioural problems in children, autism, chronic fatigue syndrome and attention deficit disorder

As well as diarrhoea, constipation, bloating, Crohns Disease, and diverticulitis.

If you have any of these symptoms it would be well worth getting allergy tested and of course see your Doctor.

Gluten is found in wheat, rye, barley and oats. Some people may be OK with oats as it does not have Gliadin in its gluten.

Those with gluten intolerance symptoms should avoid:

Cereals, wheat flours, bread, pasta, cakes, batter biscuits and possibly oats.

Any processed foods using wheat flour as a thickening agent.

Sausages and other processed meats

Drinks made from Barley such as beer and malted milk drinks

Sauces which are thickened with flour

Eat lots of:

Fresh fruit, vegetables and salads

Lentils, peas, beans, fish, poultry, eggs and nuts.

Rice, potatoes, quinoa, buckwheat, millet and corn (maize)

Use corn flour, rice flour, soya flour or chestnut flour to thicken sauces.

Certain herbs such as slippery elm or marshmallow are very soothing to the gut lining.

Avoiding gluten can be difficult for those with gluten intolerance symptoms so it is best to seek the advice of an experienced dietician who can help you to maintain a healthy diet. In the UK and other countries coeliac societies regularly produce updated lists of gluten free manufactured foods as well as recipe ideas.

It is also advisable to take vitamin supplements and if you suffer from any of these gluten intolerance symptoms be sure to visit your Doctor as well.

——————————————————————————

Ann Ruffles was a food and technology teacher fortwenty years before joining her first and only Network marketing Company.
